1、调酸甜汁时要用米醋来调,不能用白醋或陈醋,前者酸且呛口,后者酸且色泽发黑,会影响成菜的外观。|zBt(p4z+iF9?
2、炸鸡蛋时,应先打一只鸡蛋入碗,再倒入沸油中炸制;碗内不能有水分,否则鸡蛋倒入油中后,会溅油花烫伤人。

3、如果能买到酸辣椒,可以和酸姜、酸荞头一同做成五柳料,可增加成菜酸甜的口味。
