中秋快到自己动手《冰皮月饼》超赞[68P]

中秋快到了,当然中秋吃得最多的就是冰皮啦~买现成的很贵,自己做,成本就低很多很多~自己也跃跃欲试,
r*AE~M 于是买了材料和模具就动手做。
;j u$]L*ol ET 用了两种方法来做,三种口味,发现用澄粉的那种方法,
f%\D|\;U4g"KV9VK 口感是比较好,而且很柔软,很滑很细腻,绿豆馅和奶黄馅
)u/q~PA#F#u(` [color=red]奶黄馅材料和做法:
*? mcHI]K [/color]低粉45g 粟粉45g 吉士粉90g 砂糖160g 牛油45g
o8l Un;i;ya6u 炼奶60ml 牛奶540g 鸡蛋90g(三个左右)
l7Zk e'J%z,O ` 1、将牛油隔水煮溶备用0yGd\$o'LB s;k
2、炼奶、牛奶拌匀
2l-LQmk9L*Wyq 3、把粉类和砂糖混合,然后把蛋分三次加入%@0L&~'|%c|$~%O
4、加入(1)(2)拌匀,过筛一次
,S` u.W/{ ^Rp 5、把(4)入锅大火蒸15-20分钟至熟
%P tWb[-d(d}#o 6、蒸熟后放凉,然后搓滑即可

去壳绿豆200g 砂糖100g 色拉油90ml
Ih:S;V;jHci 1、绿豆洗净,加适量水入锅煮透
^Y@%Ej)]3WO{ 2、把煮透的绿豆用搅拌机搅成绿豆泥
$? Bh/i%N!h 3、把绿豆泥倒入锅中分次加入砂糖,分次加入色拉油,小火炒干即可
!os`Z6a5OZ z9H%K [color=red]冰皮材料和做法一:;\ l9mE@Mw$utvX
[/color]糯米粉120g 粘米粉120g 面粉60g 砂糖95g y$ue.llO8Z4pZ
牛奶475ml 炼奶5汤匙 色拉油4汤匙 可可粉8g"Q aP%Cz
1、所有粉类加砂糖混合
` A"^1c9n s&{*RzG 2、牛奶加炼奶拌匀,倒入粉中搅拌均匀V;@K/r0qL
3、加入色拉油,过筛一次(我过了两次)H7G^ RxZyU2L}u
4、入锅大火蒸30分钟至熟,待凉搓匀备用
Lr c#E!B.U0l [color=red]冰皮材料和做法二(原味的做法一样,去掉绿茶粉即可):[/color]"F.wya)qI/V O
糯米粉120g 粘米粉120g 澄粉70g 糖60g
zf:S z&w IgqHC 炼奶油80g 牛奶400g 色拉油60g 绿茶粉8g|}"S ]4z$y1A2t+B
1、牛奶、砂糖、炼奶、色拉油混合拌匀 H$[{0OSCP
2、所有粉类混合,加入(1)搅拌均匀
8W AZ)s8~0Fha 3、搅拌好的面糊静置30分钟后入锅大火蒸30分钟至熟-_G6y+iE
包馅:k+x'WgT!v7tk
1、冰皮冷却后,把冰皮分成25克的小挤子压扁(这个克数是用果冻模的,如果6IV0P[e)z3}
用月饼模一个小挤子大概30克左右),放入馅料,包紧、收口、搓圆,在手上拍
mJ*EkcBq6W 点糕粉防粘
gC3onjd5A 2、在模具里撒一点糕粉,让糕粉均匀粘在模上壁上,以方便脱模,然后把包好的i.U m:v |t
冰皮面团放进模具用手掌压实
