清脆虾鬆
[size=3] 这是从乾隆生菜包得来的灵感演变而成的,用手头上现有材料搭配做出口味清新的菜式。放弃传统的西生菜而改用清脆鲜甜的乳白菜来裹虾鬆,口感风味出奇的好。

材料 :中虾20只(去头壳,剔肠切丁),皇帝蟹碎肉,肥瞟少许切细丁,鲜香菇切丁,蘑菇切丁,笋丁,葱花,乳白菜叶切段,甜茄椒一个切成盏状,粉丝一小把入油锅炸至膨胀酥脆,压碎。!O@%GWII,|&g-W Q

调味料 :生抽半大匙,蠔油一茶匙,白胡椒粉/味精/盐少许,料酒一茶匙。RcX#l P

做法 :一大匙油烧热,放进肥瞟煎出油,加入香菇丁/蘑菇丁/笋丁翻炒3-4分钟,加虾仁丁和所有调味料吵熟,放进蟹肉/葱花快速拌均即可。吃时拌入炸脆的粉丝,口感更佳。
